Vineyards: The grapes for the Piattelli Grand Reserve Cabernet Sauvignon are grown in our vineyards located in Tupungato at 3,936 feet above sea level, on soils of loamy-sandy texture and poor with regards to organic matter. The climate is semi arid (with rainfalls of 250 mm per year), with rigorous winters and warm summers. The vineyards are drip-irrigated with water from the Andes Mountains. The vineyards are 30 years old with yields of 7,000 kg per hectare. The fruit grown in this vineyard is greatly concentrated which results in our award winning Piattelli Grand Reserve Cabernet Sauvignon.
Harvest: Picked by hand at the end of April in boxes of 18 kg and with selection of clusters.
Vinification: When the grapes are received in the winery, the stalks and stems are removed and the grapes are then sent to stainless steel tanks of 5,000 and 10,000 liter capacity. This allows us to work with the grapes by hand in order to carry out the required gentle extraction of tannins. This extraction is followed by a 5 day cold maceration, where a temperature of 8°C is maintained. The fermentation started with selected yeasts and then the temperature is controlled so that it does not exceed 28°C in order to protect the wines exceptional flavors and aromas. The wine is tasted daily to ensure the achieved structure remains intact. Once the alcoholic fermentation has finished, the wine is transferred to the French oak barrels where the malolactic fermentation is completed and the aging begins.
Aging: Aged in French oak barrels for 13 months.
Varietal Composition: 85 %-Cabernet Sauvignon, 15 %-Malbec.
Tasting Notes: The Piattelli Grand Reserve Cabernet Sauvignon 2007 has an intense deep red color. In the nose it reveals red and black fruits, like strawberries, cherries and cassis, with notes of chocolate and smoke. In the mouth this wine has great body, balanced tannins, and a long finish.
